T. Colin Campbell

American biochemist who specializes in the effect of nutrition on long-term health. He is the Jacob Gould Schurman Professor Emeritus of Nutritional Biochemistry at Cornell University.

John A. McDougall

A graduate of Michigan State University’s College of Human Medicine, Dr. McDougall performed his internship at Queen’s Medical Center in Honolulu, Hawaii, and his medical residency at the University of Hawaii. He is certified as an internist by the Board of Internal Medicine and the National Board of Medical Examiners. He and Mary are also the authors of several nationally best-selling books as well as the co-founders of Dr. McDougall’s Right Foods, which produces high quality vegetarian cuisine to make it easier for people to eat well on the go.

Caldwell Esselstyn

Caldwell B. Esselstyn, Jr., received his B.A. from Yale University and his M.D. from Western Reserve University. In 1956, pulling the No. 6 oar as a member of the victorious United States rowing team, he was awarded a gold medal at the Olympic Games. Dr. Esselstyn has been associated with the Cleveland Clinic since 1968. In 1991, Dr. Esselstyn served as President of the American Association of Endocrine Surgeons. His scientific publications number over 150, “The Best Doctors in America” 1994-1995 published by Woodward and White cites Dr. Esselstyn’s surgical expertise in the categories of endocrine and breast disease. In 1995 he published his bench mark long-term nutritional research arresting and reversing coronary artery disease in severely ill patients.

Scott Jurek (Source)- American ultramarathoner, New York Times bestselling author of Eat & Run, and public speaker. Throughout his career, Jurek has been one of the most dominant ultramarathon runners in the world, winning many of the sport's most prestigious races multiple times, including the Hardrock Hundred (2007), the Badwater Ultramarathon (2005, 2006), the Spartathlon (2006, 2007, 2008), and the Western States 100 Mile Endurance Run (1999–2005). In 2010, at the 24-Hour World Championships in Brive-la-Gaillarde, France, Jurek won a silver medal behind Shingo Inoue and set a new US record for distance run in 24 hours with 165.7 miles (an average pace of 8 minutes and 42 seconds per mile).

Carl Lewis (Source)- American former track and field athlete who won nine Olympic gold medals, one Olympic silver medal, and 10 World Championships medals, including eight gold. His career spanned from 1979 to 1996, when he last won an Olympic event. He is one of only three Olympic athletes who won a gold medal in the same individual event in four consecutive Olympic Games.

Fiona Oakes (Source)- a British marathon runner, who holds four world records for marathon running. In 2013, she won both the Antarctic Ice Marathon and the North Pole Marathon. She runs despite losing a knee cap from an illness when she was 17. Fiona has been vegan since 6 years old.

Harvey Sweetland Lewis (Source)- American ultrarunner, social studies and economics teacher, world traveler and public speaker. Lewis is one of six male runners representing Team USA at the 2017 International Association of Ultrarunners (IAU) 24 Hour World Championship on July 1–2, 2017 in Belfast, Northern Ireland. Previously, he has represented Team USA at the last three 24-Hour World Championships in 2012, 2013 and 2014. In July 2014, Lewis won the Badwater Ultramarathon near Death Valley, CA, in just under 23 hours and 53 minutes. This race is touted as the world’s toughest foot race due to extremely hot temperatures and immense elevation changes throughout the course. Six months later near the Canada–US border in International Falls, MN, Lewis tied for second place at the Arrowhead 135

Kate Ziegler (Source)- American competition swimmer who specializes in freestyle and long-distance events. Ziegler has won a total of fifteen medals in major international competition, including eight golds, five silvers, and two bronze spanning the World Aquatics and the Pan Pacific Championships. She was a member of the 2012 United States Olympic Team, and competed in the 800-meter freestyle event at the 2012 Summer Olympics.

Jason Lester (Source)- endurance athlete, the author of Running on Faith, and the 2009 ESPY Award winner for Best Male Athlete with a Disability. He is the first disabled athlete to complete the Ultraman World Championships. He is the Founder of the EP1C, INC. brand and is the Chairman of The NEVER STOP Foundation. Lester has completed endurance challenges such as the EPIC5 Challenge (5 Iron distance triathlons on 5 Hawaiian islands in 5 consecutive days), and a 1,000-mile (1,600 km) run and 4,000-mile (6,400 km) bike across the United States. On May 5, 2013 Lester ran 3,550 miles (5,710 km) across the United States, becoming the 4th fastest runner to run from San Francisco to New York City to raise money for Hurricane Sandy victims. He has also run 2,600 miles (4,200 km) along The Great Wall of China in 83 days, setting a world record by becoming the first person to run the length of the wall solo in a single attempt

David Zabriskie (Source)- retired professional road bicycle racer from the United States, who competed as a professional between 1999 and 2013. His main strength is individual time trials and his career highlights include stage wins in all three Grand Tour stage races and winning the US National Time Trial Championship seven times.

Christine Vardaros (Source)- Professional cyclist. She represented USA Cycling at 3 World Cyclo-Cross Championships as well as over 25 Cyclo-Cross World Cups since year 2002. In addition, she has made many appearances to the podium of UCI International events, including a few wins.

Molly Cameron (Source)- American professional cyclo-cross racing cyclist who rides for Portland Bicycle Studio. She is the only transgender athlete to compete in a UCI Cyclo-cross World Cup and an acknowledged vegan athlete. Molly won the 2004 Cross Crusade singlespeed series and has been racing at a pro level ever since. She has competed in cyclo-cross races in the USA and Europe at the elite racer level.

Rich Roll (Source)- In May 2010 Rich completed the EPIC5 CHALLENGE- 5 ironman-distance triathlons on 5 islands of Hawaii in under a week. Rich has been a top finisher at the 2008 and 2009 Ultraman World Championships in Hawaii.
